Ingredients:
- 120g cashew nuts
- 150g almonds
- 120g macadamia nuts
- 120g pumpkin seeds
- 24g white sesame seeds
- 2g dried thyme
- 4g dried rosemary
- 5g cayenne pepper
- 12g kosher salt
- 2g black pepper
- 3 tablespoons honey
Directions:
- Preheat and Prep: Preheat your oven to 180°C (350°F). While that’s heating up, grab a large mixing bowl.
- Flavor Mix: In the bowl, whisk together the honey, thyme, rosemary, cayenne, salt, and black pepper. The honey gives a hint of sweetness while the herbs and spices add an irresistible depth of flavor.
- Coat the Nuts: Add the cashews, almonds, macadamias, pumpkin seeds, and sesame seeds to the bowl. Stir everything together until all the nuts and seeds are coated evenly. They should be glistening with that honey-spice mix!
- Bake: Spread the mixture evenly onto a baking sheet lined with parchment paper. Pop it in the oven and bake for 20-25 minutes. Halfway through, be sure to rotate the tray and give the nuts a quick stir to ensure they toast evenly.
